From the episode

The Giants officially made the move from Jameis Winston to J.J. McCarthy as their starting quarterback...this is a chance to resuscitate his career. He feels he's in better shape to succeed than he was in Minnesota because experience does wonders...they developed an offense for Jackson Dart that several sources told me they had to put on the back burner when Winston became the starting quarterback. This now gives them a chance to pull it out and use it using McCarthy's athleticism and legs.

Positive signalRole

McCarthy named Giants starter; positioned to revive career with athletic-friendly offense.

McCarthy has been named the Giants' starting quarterback for the foreseeable future, replacing Jameis Winston; he views this as an opportunity to resuscitate his career after his Minnesota stint, believing he is in better shape to succeed with the Giants due to increased experience and the team's plan to deploy an offense built around his athleticism and legs that was previously shelved for Winston, which should also benefit the struggling running backs.
