From the episode

I remember in 2023 when Mike and Baker had that great year together. The first one, they were just like hammering him on out routes. Cause Mike Evans is bigger and he's awesome against man coverage.

Evans' out-route dominance and man-coverage wins drive Baker's best efficiency.

Mike Evans is the centerpiece of Baker Mayfield's efficiency; in 2023, they hammered him on out routes because Evans is bigger and dominant against man coverage, winning on all out routes. Baker loves throwing out routes to the field with space, and Evans' presence is critical to the offense's success, as evidenced by the dramatic efficiency drop when Evans is unavailable.
